Later, while working with Hospitality Group from 2003 to 2014 as the Managing Director/Operations Director, Matthew Trim successfully acquired and turned around poor performing businesses to become award winning restaurants. He also built Trim Hospitality from a start-up business to $5m within 3 years with significant and sustained increases to gross profit and EBITDA. From 2012 to 2017, he worked as the Business Development Director at 131 Pizza, Melbourne, Victoria, and successfully built it to become the largest independent Pizza Group within Australia with more than 200 member stores nation-wide with outstanding sales and closing skills.

Trims Retail was the company Matthew Trim started his professional journey with back in 1998 as a Retail Operations Manager. Trim Clothing was a group of 4 retail clothing stores across South Australia employing more than 100 employees. As a Retail Operations Manager, Matthew was responsible for operations management, cost maintenance, sales, IT marketing, policies and procedures, management reporting and HR across all retail stores. One of his biggest achievements in Trims Retail was playing a lead role in the execution of commercial management strategies which drove growth within the group beyond $15m per annum. In his current role too, which is that of the Director at Commercial Adelaide Real Estate Group, Matthew Trim diligently performs his responsibilities, including accepting and listing properties and businesses for sale and lease, conducting inspections, and advising buyers on the merits of properties and businesses as well as the terms of sale or lease. Apart from that, he advises vendors of sales and marketing options; and develops business plans, budgets, policies and procedures for the agency. He also takes care of arranging finance, land brokerage, conveyancing and maintenance of premises.
